We've given the traditional cherry blossom season a Sexy makeover with a stunning installation, a selection of Suntory sakura cocktails and a range of limited edition cherry blossom cakes.
The Sekura Cakes
Sebastian Davies, founder of Sebastian Wild Cakes, renowned for creating sculpted cakes that resemble real life objects, has produced a show-stopping edible creation in collaboration with Sexy Fish. Sexy Sakura is a cherry blossom shaped edible flowerpot made from a delicately flavoured sponge and filled with a silky Swiss meringue buttercream holding a blossom tree, sprouting flowers sculpted from sugar paste. The pot also features a delicious white chocolate ganache, wrapped in fondant and topped with crushed chocolate cookies. The limited edition cakes are available while stocks last. Each cake is available individually for £30, to eat in or take home.
The Suntory Cocktails
Our bar team have partnered with Japanese whisky pioneers House of Suntory, to create four cocktails inspired by blossom season. The 'U and Me' cocktail combines Hibiki Japanese Harmony with a sweet umeboshi, lemongrass and ginger cordial, tonka bean bitters, and is topped with Tokaji. Those less partial to whisky can try the 'Japanese Collins', our take on the traditional Tom Collins cocktail, made with Roku Gin, wakamomo syrup and Ms Better Mount Fuji bitters, containing white peach, chrysanthemum, burdock and yuzu. Topped with Fever Tree soda water, this floral and citrusy serve is the perfect way to toast Sakura season.
The Sekura Installation
A striking blossom installation made of neon lights will also adorn the outside of, and entrance to our restaurant, taking inspiration from the ancient Japanese ritual of Hanami. Hanami is the traditional Japanese custom of welcoming spring by recognising the transient beauty of flowers, particularly cherry blossoms.
